The Lego movie~Not so good



Today was day #5 of school vacation. It's been a looong week. 1 more day to go, unless they have Monday off because of a snowstorm. We are getting snow, just not sure how much it will be. We went to see "The Lego movie" with some of our friends. We didn't know what it was about really. All I knew was that there was something to do with a Super hero in it. I thought it was weird & confusing. Tara thought it was okay & my friend thought it was dumb. Oh well, at least we got out with some friends. We had her friend Kelly come over after & then another friend came over for a while. I need a vacation from her vacation. Tomorrow I am going to the mall & I think she is going to a museum with her friend. I'm hoping to catch up on General hospital. I have 2 & 1/2 to watch.

Gluten-free banana bread


Prep Time 15 min
Total Time 2 hr 40 min
Servings 16

Ingredients:

1 box Betty Crocker® Gluten Free yellow cake mix
1 cup mashed very ripe bananas (2 medium)
1/2 cup butter, softened
3 eggs
1/2 cup chopped nuts, if desired

Directions:

1. Heat oven to 350°F. Grease bottom only of 9x5-inch or 8x4-inch loaf pan with shortening.

2. In large bowl, beat cake mix, mashed bananas, butter and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.

3. Bake 9-inch loaf 55 to 60 minutes, 8-inch loaf 1 hour 5 minutes to 1 hour 15 minutes, or until toothpick inserted in center comes out clean. (Place sheet of foil over loaf to prevent overbrowning.) Cool 10 minutes. Loosen sides of loaf from pan; remove from pan to cooling rack. Cool about 1 hour before slicing. From Betty Crocker.com

My computer is driving me crazy

Well I was going to do a Mommy & Me Monday post today, but for some reason I can't add photos. My computer has been acting so screwy. It kicks me off in the middle of something. It says Lost Broadband connection. I think we need a new router. Who knows when we will get 1. So I haven't been doing long blog posts because of my computer. I get on to do a post & get kicked off. It's frustrating. I hate doing a post with no photos. Anyway, It's school vacation this week. Today we went food shopping & did some errands. Kept busy. We have appointments, going to the movies & to the mall this week. I've been wanting to get to Ulta & Lush. Also have been wanting to go to some crafting stores. I finally got my Florida photos printed (most of them anyway), so I want to work on those. I realized last night that I was missing some stickers & things. They were still in my bag from November when we went to Vermont. I have a bunch of beachy stickers & some FL 1s too.

Peanut butter cookies with a Kiss


 

3 Ingredient Peanut Butter Cookies with a Kiss


Ingredients:
1 cup peanut butter
1 cup sugar
1 egg

Whisk the egg, mix in sugar then add the peanut butter. Form into a ball and place on an ungreased cookie sheet. I like to bake them on a stone so they come out perfect on both sides. Press down using a fork or leave in a ball and place a hershey’s kiss in the center once it’s finished baking. Bake at 350 degrees for 8-10 minutes. Let cool a few minutes then transfer to a cooling rack. You can easily double or triple the recipe for more delicious cookies.

I made these last night for Valentine's day. They are so yummy & gluten free. I think the next time I make these, I might add chocolate chips to the batter. I found this recipe on the Organize & decorate Everything blog.

I just did my Valentine's nails last night. We are celebrating tomorrow night. I didn't do anything too fancy. Hubs is working late tonight & tomorrow night I am wearing a black & gray sweater. I have on Essie~French affair, Pure Ice~Platinum & the darker pink is Wet N' Wild Wild Shine #420B.

I live in the wrong place



I've lived in New England my whole life. Since I was about 15, I've wanted to move somewhere that is warm year-round. It's just been a longing since then. But I never moved away to somewhere warm. Every September I start getting depressed & it lasts until April maybe. I hate being cold & I'm always cold. Right now I can hardly type because my fingers are so cold. I know a lot of people say if you don't like where you live, move. But it's not that easy. We have a house, a child & we like our area. I'm the 1 that really hates Winter, not the hubby so much. So we are stuck here, at least for the next 20 years.

Gluten-free Macaroni & cheese



Baked Macaroni & Cheese

2.5 – 3 cups uncooked pasta (I used Trader Joe’s)
¼ cup butter
¼ cup GF flour (I used sorghum)
½ tsp salt
¼ tsp pepper
¼ tsp ground mustard
¼ tsp Worcestershire sauce (Lea & Perrin’s is GF)
2 cups milk 2 – 4 cups shredded cheddar cheese (8 – 16 ounces, depending on how cheesy you want your macaroni & cheese;
I use 2% milk fat cheese from Kraft)
Bread Crumbs

1. Heat oven to 375 degrees.
2. Cook macaroni as directed on package.
3. While macaroni is cooking, melt butter in 3-quart saucepan over low heat. Stir in flour, salt, pepper, mustard and Worcestershire sauce. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat; Stir in Milk. Heat to boiling, stirring constantly.
Boil and stir 1 minute. Stir in cheese. Cook, stirring occasionally, until cheese is melted.
4. Drain Macaroni. Gently stir macaroni into cheese sauce. Pour into greased (I use Pam) 2-quart casserole. Top with breadcrumbs and spray top with Pam. Bake uncovered for 20 – 30 minutes or until bubbly.

Serves 5 (1 cup servings). Calories: 463 if you use 2 cups of cheese; 595 if you use 4 cups of cheese.

Reality shows


Vanderpump Rules from Pinterest

I know most people either love reality shows or they hate them. I happen to be one of the 1s that loves them. I'm a pretty nice, easy going person, who is polite & respectful. I can't imagine throwing a drink in someone's face, slapping someone in the face or telling someone to their face that they are a biatch. So I think that's why I like watching reality shows. They say & do things that I never would. I also hate arguing & drama, but for some reason, I don't mind watching other people's drama & fights. So I just started watching "Vanderpump Rules" this season (I heart Bravo tv. I want to see the 1st season). I somehow got sucked into watching the show. I don't like too many of them on there. I like Peter & Scheana & I love Lisa Vanderpump. But I think they are all nutso. I also watch "The Housewives of Beverly Hills" & "The Batchelor". There's a new Southern show coming on & "Flipping out" is coming back in March. So some shows go off & others return, so I never have go go through withdrawel. haha. There is always another show to take it's place. Waiting for Housewives of Orange County & New Jersey to come back.
