Another bathroom make-over

This is our upstairs bathroom. Anthony & my Dad painted it last weekend. I don't have any before pics (well I do, but I'm not sure where they are on the computer). They just painted it. It's a grayish-blue, before it was an off-white color. I love the color.

Mommy make-up

Spanks are not for me

I was at Target the other day & tried on a tank top by Spanx. It was so tight that I couldn't breathe. I've had other shapewear items, but they are always so tight that I can't stand it. Maybe that will help me start eating a little better knowing that I can't just buy a clothing item to hide my tummy. I had my daughter almost 4 years ago & my tummy is bigger than ever. At least Spring is on the way & we can start walking & getting more exercise.

Bad hair day

My daughter has bad hair days, most days. But I think yesterday was the worst so far. She likes her hair messy, but I don't. She got my crazy hair. I've always had tangles in mine & it gets really bushy. My Mom always called mine a Rat's nest. Tara has a rat's nest too. I've tried so many frizz creams, tangle sprays etc... Nothing seems to work. I try all the same frizz creams on me too.

40 is hard

I turned 40 last June & I have never felt so unhealthy, tired & had so many health probs going on. My most recent problems are a broken tooth, sore throat & a creapy rash on my hand. Last Summer I was eating an olive that wasn't suppose to have a pit in it & I bit down & it did have a pit. So it's been bothering me since last July or August. It finally cracked a few weeks ago when I was eating my Special K cinnamon pecan cereal. Luckily it's on the side inside my tooth, where no one can see it. I called the dentist & he got me in 3 days later. I thought he would fix it then, but he just sanded it, so it wouldn't be jagged against my tongue. I'm suppose to wait till April 13th to get it fixed, but it has been bothering me when I eat hot foods. I called yesterday to see if they could get me in sooner, but because it's an hr & 1/2 visit, they might not be able to get me in before then. I went to the doctor yesterday & she did a throat culture for the sore throat, but she said she didn't think I had strep. The rash is eczema. It started out like a regular rash, now it looks like a burn. It went from a few spots to 1 big spot. The doctor called in a cream, but the pharmacy won't get it in till tomorrow afternoon. I've been really tired for the past month. Between noon & 6 I get really tired & have to nap. I try to get things done in the morning, when I have energy. What's next a broken hip?

Queen of multi-tasking

Not so much anymore. I use to be really good at multi-tasking. Hubs is late tonight (his company is finally having their Christmas party tonight. It was cancelled 2 times). Tara didn't nap & I was running in the kitchen trying to cook, going back & forth to my office trying to do some computer stuff & doing crafts with T. I had Tara bring her little table into my office & was helping her do a craft. It got me thinking back to when I use to work & use to be really good at multi-tasking. It's a bit harder these days, but I multi-task 24 hrs a day. I think most Moms do. I'm the type of person that can't sit still. I will sit on the couch, but will be writing out the meal plan for the next week, writing out the food list, writing blog ideas (I do a lot of writing with an actual pen. I always have a pen in my hand) & making a lot of lists. That helps be more organized & helps me get more things done at once.

new tattoo soon

I'm hoping to get another tattoo soon. I have 4 already & want a few more. We'll probably be going in April to get prices. Anthony only has 1 so far, but he wants to get Tara's name. I want to get her name written on my right inner wrist. I also want to get her footprints from the day she was born. Most likely I'll get the footprints on my leg instead of my wrist. I really like just handwriting on the wrist, but I'm going to ask what the tattoo artist thinks about doing a small footprint on my wrist with the name. Not sure how the footprint will look just floating around on my ankle.

The Day has finally come

It's been a day that I have dreaded for years. My daughter wanted to pick out her clothes that she wore today. We're going to see my hubby's parents & my parents today. So I wanted her to wear something extra cute. Maybe a cute dress or shirt. This is what she picked out.

I've always had fun picking out her clothes, bracelets, necklaces, hair accesories etc.. Everything always has to match. Sometimes I lay her clothes out a week ahead if I know we have something fun going on. So my heart is aching a little bit today. My baby is growing up.

I got a Shamrock Shake last week. Last night & asked Anthony to bring 1 home for T & I to split, but our McDonalds was out of them. So today we went to another 1 & yay they had them.

We also went to decorate a cupcake at a local store.

Lately I've been....

*Starting to think about our Summer vacay. I think we are going to Maine. I've been checking out Bed & Breakfasts. I love staying @ B&B's. They're so cozy & homey. I know it's not till the end of June, but time is flying by.
*Doing Pilates. I found a 10 minutes pilates ab workout on our On-Demand Channel.
*Cleaning & organizing. Like a crazy woman. I've been getting rid of so many things. I'm doing Making Lemonade's organizing challenge. I totally have Spring fever.
*Been scrapbooking more.When Tara naps. I need to get a new album, to put all of the layouts in it from this year. I have them in a box.
*Checking out sketch pages. For layout ideas. My pages always seem to be set up the same way. I want to do something completely different.
*Thinking about getting rid of my skinny girl clothes. I'm just not going to be able to wear them again. It's not going to happen.
*Hoping to sell some things on Craigslist. I have tons of jewelry & clothes that I don't wear.

Yum of the day

I just happened to find these yummy snacks 1 day when I was in the grocery store. I love trail mix (without any type of dried fruit). I've been splitting them with Tara. Of course she mostly likes the chocolate pieces, marshmallow pieces & the coconut. I like the cocoa almonds, the graham cracker pieces & the honey roasted nuts.

Homemade granola recipe

Homemade granola recipe

1/4 cup vegetable oil (can do canola if you want)
2/3 cup honey (I usually warm the honey in microwave to make mixing easier. Its just smoother this way)
3 cups rolled oats
1/2 cup almonds (coarsely chopped)
1/2 cup cashews

Then I literally just pour in some sesame seeds, some flax, and some wheat germ.

Combine all dry ingredients and then dump in the honey and veg. oil. Mix until honey and oil mixture evenly coats the dry mix.

Then put that mixture onto baking sheets (one or two) - should be spread out on baking sheet (and line baking sheet w/ aluminum foil).

Bake for 1 1/2 hour at 225. I take it out every 20 minutes and stir it up to make sure it bakes evenly.

Once golden brown, dump granola into big bowl and add at least a cup of some mixture of raisins, cranberries, dried cherries -whatever dried fruit you'd like to try. I usually do a little more than a cup. Stir in the dried fruit and just let cool. Then when done, just store in a tightly sealed container.

Easy Chicken Enchiladas

I made these for dinner last night. They were really good. I left out the cilantro because we don't like it. This was the 1st time that I had salsa verde. I liked it a lot.

Poached chicken breast keeps this dish on the lighter side, but if you’re short on time, substitute rotisserie chicken. You can also assemble the enchiladas a day ahead and refrigerate until you're ready to bake them.
Active Time: 25 minutes
Total Time: 35 minutes
Recipe Ingredients

Kosher salt and black pepper
2 6-oz boneless, skinless chicken breasts
1 Tbsp olive oil
1 onion, chopped
1 poblano or green bell pepper, thinly sliced crosswise
1 cup fresh or frozen corn kernels
1/4 cup lowfat sour cream
1/2 cup fresh cilantro, chopped
4 oz Muenster or Jack cheese, shredded (1 cup)
1 cup mild salsa verde (green salsa)
8 6-in. corn tortillas, microwaved on high until pliable

Recipe Preparation

1. Heat oven to 450°F. Fill a medium saucepan halfway with water. Bring to a boil; add 1 tsp salt. Add the chicken, reduce heat and simmer until cooked through, 10 to 12 minutes. Transfer to a plate and let cool; shred.

2. Meanwhile, heat the oil in a large skillet over medium heat. Add the onion, poblano, and 1/4 tsp each salt and pepper; cook, stirring occasionally, until tender, 5 to 6 minutes. Stir in the corn and sour cream. Fold in the chicken, cilantro and 1/2 cup of the cheese.

3. Spread 1/2 cup of the salsa in a 13 x 9-in. baking dish. Roll the chicken mixture in the tortillas (about 1/2 cup per tortilla) and place seamside down in the dish. Chick Lit

My fave books to read are Chick Lit books. They are so much fun. I also love mysteries. I use to love Mary Higgins Clark books. I'm hoping to get more into reading. I got "Shopaholic ties the Knot" from the library yesterday. I read "Confessions of a Shopaholic" years ago. I even bought the movie last Summer & I still haven't watched it. Someday. Can anyone recommend a good Chick Lit book or mystery?

Tara has done 2 sessions of gymnastics. She has 1 more week left & will be all done. I'm kind of glad. She really likes it, but there's so many germs there & lots of the kids get sick from being there. We both had the flu from being there for 1 of the birthday parties that she went to there. She'll be doing swimming lessons over the Summer & then I think she'll do dance in the Fall.

Update: Yes, the kids get sick from being at the gym. They have the flu every other week & it's from being there. We went to a party & the girl working there, had to run off to clean up some throw up. She came back & helped out with the party. The next night I was up throwing up & then Tara was the next day. Then I found out that every kid at the party also had the flu. That's about 10 kids. My friend's kids get sick after they go there too.

It's been 1 of those weeks

This has been a crazy week. Tara is going through the terrible 3 & 1/2's. She's been so angry & cranky lately. Which makes me really cranky. Our driveway is all ice. I couldn't get my car up it today. I tried 4x. We slid backwards & luckily stopped before we hit the street, we have a quiet street, so there weren't any cars coming anyway. None of the stores have salt because it's March. I've had a headache all day & skipped the scrapbooking club @ my friend's house tonight. So I'm looking forward to the weekend & maybe having a glass of wine.

March goals

I can't believe that it's March already. Wasn't it just New year's eve? I've made a list of my goals for March.

1.) Read 1 book. I have Accidental Housewife from the library. I've read like 4 pages so far. So I'm hoping to finish it.

2. ) Continue Spring cleaning & get rid of more stuff.
I'm doing the challenge on Making Lemonade's blog. I'm hoping that will inspire me

3.) Organize more. I want to get all my drawers & scrapbooking things organized & in order.
4.) Answer all the e mails that I have. I'm horrible with answering e mails lately.

5.) Donate some clothes. I'm getting rid of my skinny girl clothes.

6.) Go shopping alone.

7.) Do 10 scrapbook pages

8.) Go to bed earlier. By 10:00pm every night.

9.) Figure out what I want for my inner wrist tattoo. I know I want Tara's name, but don't know if I want Tara Rayne (her middle name) & also her footprints from the hospital. I want her footprints too, but I might get them on my ankle seperate from her name.

10.) Get my next tattoo.
11.) Get a blog make-over. I've been wanting to do this for a while, but haven't found a blog designer that is reasonably priced yet.
